Shading comes from the very early days of television.  Long before my time.

 The Iconoscope tube was plagued with video levels for the same light values being different.  And I was told that this would change with exposure.  (Can someone confirm that?). Any how, the video operator was required to add combinations of horizontal and vertical sawtooth and parabola signals to the video signal.  It would correct the signal back to flat and uniform across the picture.  

The before looked like a shade was on the picture.  

Later tubes required these signals to correct for the same type of errors but they did not dynamically change.

Today it is the video operator that makes the cameras look pretty.  But the old term of "shading" is still used to describe the job.
